Bramborove Knedliky (Potato Dumplings)
Ingredients
- 2 parts potato
- 1 part flour ( about 1 cup per potato )
- 1 tsp baking powder per cup of flour ( try 2 or 3 tsp next time)
- 1/8 tsp salt for every cup of flour
Directions
- Place potatoes in pot
- Fill water 1 inch above potatoes
- Heat on high until water starts to boil
- Boil for 20 minutes
- Remove potatoes and empty hot water
- Place potatoes in cold water for 5 minutes
- Remove potato skin
- Grate potatoes into bowl
- Add salt (1/4 tsp for every 2 russet potatoes)
- Mash
- Add flour (half the weight of potatoes, or 1 cup per potato)
- Mix into dough
- Roll dough and cut into peices (about size of a fist)
- Shape cut dough into an oval ball ( 1 potato should make 2 knedliki)
- Boil water and place dough in steam basket ( should have enough water to steam for 20 minutes, about 6 cups )
- Cover and cook for 20 minutes (med-high)
- Remove and let cool for 5 minutes before slicing
