Bean Chili
Ingredients
- 1/2 onion
- 1 carrot
- 1 can corn (drained / or 1 cup frozen)
- 2 can beans ( with juices / try mixing types )
- 1 can diced tomatoes
- 2 garlic clove
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1/4 tsp thyme
- 1 tbsp oil
- 4 drops liquid smoke
- 1 tbsp soy sauce
- 1 tbsp vinegar / wine
Garnish
- Pickled jalapeneo
- Vegan sour cream
- Green onions or chives
- Sliced avocado
- Salsa
Directions
- Put all ingredients in a pot
- Turn heat to medium and heat to simmer
- Cover with lid with slight opening and reduce heat to low
- Cook for 25 minutes
- Turn off heat and remove lid
- Let stand for 15 minutes
- Serve
