Bean Chili


Ingredients

  • 1/2 onion
  • 1 carrot
  • 1 can corn (drained / or 1 cup frozen)
  • 2 can beans ( with juices / try mixing types )
  • 1 can diced tomatoes
  • 2 garlic clove
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • 1/4 tsp thyme
  • 1 tbsp oil
  • 4 drops liquid smoke
  • 1 tbsp soy sauce
  • 1 tbsp vinegar / wine

Garnish

  • Pickled jalapeneo
  • Vegan sour cream
  • Green onions or chives
  • Sliced avocado
  • Salsa

Directions

  • Put all ingredients in a pot
  • Turn heat to medium and heat to simmer
  • Cover with lid with slight opening and reduce heat to low
  • Cook for 25 minutes
  • Turn off heat and remove lid
  • Let stand for 15 minutes
  • Serve
