Roasted Vegetables

Makes 2 servings


Ingredients

  • 1 potato
  • 2 carrots
  • 8 cloves garlic
  • 1 can chickpeas or 1/2 cup lentils

Directions

  • Preheat oven to 400 degrees
  • Slice potatoes and carrots into 1/2 inch thick peices
  • Toss in oil and seasonings (paprika / thyme)
  • Bake for 30 minutes
  • Bake chickpeas and garlic for 20 minutes
  • If making lentils, add 1 1/4 cup of water to 1/2 cup of lentils
  • Simmer for 20 minutes
  • Add seasonings after lentils are done (1 tsp boullion)
