Roasted Vegetables
Makes 2 servings
Ingredients
- 1 potato
- 2 carrots
- 8 cloves garlic
- 1 can chickpeas or 1/2 cup lentils
Directions
- Preheat oven to 400 degrees
- Slice potatoes and carrots into 1/2 inch thick peices
- Toss in oil and seasonings (paprika / thyme)
- Bake for 30 minutes
- Bake chickpeas and garlic for 20 minutes
- If making lentils, add 1 1/4 cup of water to 1/2 cup of lentils
- Simmer for 20 minutes
- Add seasonings after lentils are done (1 tsp boullion)
