Breakfast Burrito

Ingredients

  • vegetable oil
  • Batter

    • 1 block firm tofu (14 oz)
    • 3 tbsp nutritional yeast
    • 3 tbsp chickpea flour or corn starch
    • 1/2 tsp tumeric
    • 3/4 tsp salt
    • 1/2 cup oat milk
  • Mozeralla
  • Chedder
  • green onion ( or chives )
  • 1/2 carrot

Optional

  • Put batter ingredients into a mixer and blend until smooth
  • Add mixture to pan with oil
  • Fry until brown on bottom
  • Add cheese
  • Fold over and fry until cheese is melted

  • Serve
