Dump and Bake


Ingredients

  • 1 tbsp coconut oil
  • 1/2 brick tofu
  • 6 Field Roast sausage links (shredded)
  • Tumeric
  • Maple Syrup
  • 2 large tortillas

Optional

  • Vegan Mayonaise
  • Chipotle hot sauce
  • Salt
  • Pepper
  • Garlic
  • Greens
  • Liquid smoke

Directions

  • Add coconut oil and water into pot
  • Heat on medium and wait until steaming
  • Add diced Yukon gold potato into pot
  • Cover with lid and reduce heat to medium-low
  • Cook potatoes for 5 minutes
  • Add chopped carrots and cook for 10 more minutes
  • Add diced onions, garlic, beans and stir in seasonings
  • Add kale on top, cover and cook for 5 more minutes
  • Mash everything together with a potato masher a few times
  • Serve
