Lentils and Rice
Makes 1 serving
Ingredients
- 1/3 cup green lentils (65g)
- 1/3 cup brown rice (70g)
- 1 medium carrot
- 3 cloves garlic
- 1/4 cup frozen peas
- 1/4 cup brocolli
- 2 tbsp hemp seeds
- 1 tbsp sesame seeds
- 1 tsp mushroom seasoning (trader joes)
- 1 tbsp olive oil
Options
- 2 tbsp cashews (instead of sesame seeds)
Directions
- Put potatoes, carrots, and garlic in a large pot
- Fill pot with water, 1 inch above
- Heat on high until boiling
- Boil for 15 minutes
- Simmer lentils for 12 minutes
- Add steamer basket with brocolli and peas for 6 minutes
- Removed boiled ingredients with spider seive
- Smash ingredients together into a bowl
- Add and boil peas in the pot with water
