One Pot


Ingredients

  • 3 cups water

Any 2

  • 3 tbsp quinoa
  • 3 tbsp lentils ( any color )
  • 3 tbsp barley
  • 3 tbsp rice
  • 1/4 cup peas ( frozen )
  • 1 potato
  • 1/4 cup beans
  • 1/4 cup chickpeas
  • 1/4 cup tofu
  • 2 tsp better than bullion
  • 1/4 tsp paprika
  • 1/4 tsp thyme
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Optional

  • Carrots
  • Dried shitaki
  • Corn
Directions
  • Add all ingredients except salt / bullion
  • Heat to simmer on high
  • Reduce to low and cover
  • Simmer for 30 minutes
  • Add salt / bullion
  • Uncover and let cool for 5 minutes
