Pasta Mushroom Strogonaff (spiral)
Ingredients
- 1 tsp oil
- 1/2 package dry spiral noodles (8oz)
- 1 package sliced mushrooms ( or dried )
- 1/4 onion ( or shallot, optional )
- 1 can coconut milk
- 1 cup water
- 1 tsp better than bullion
- 2 tsp tahini (optional)
- 1 tbsp liquid aminos (optional)
- 1 tsp thyme
- 2 tsp nutritional yeast
- 2 tsp italian herb seasoning
- 1 tsp garlic powder (?)
- 1 tsp onion powder (?)
- 1 tsp dried mushroom powder / umami powder (optional)
- Vegan mozzeralla
Directions
- If using dried mushrooms, let mushrooms sit in 1 cup of warm water
- Save 1 cup of water
- Heat cast iron on medium
- Add oil to cast iron
- Add mushrooms
- Let mushrooms brown for about 8 minutes
- Add onions and cook until translucent
- Add everything else except cheese
- Heat to boil uncovered on medium
- Simmer covered for 8 minutes on low
- Prehead oven to 450
- Add cheese
- Add uncovered into oven for 5 minutes
- Let sit for 5 minutes and serve
