Pasta Mushroom Strogonaff (spiral)


Ingredients

  • 1 tsp oil
  • 1/2 package dry spiral noodles (8oz)
  • 1 package sliced mushrooms ( or dried )
  • 1/4 onion ( or shallot, optional )
  • 1 can coconut milk
  • 1 cup water
  • 1 tsp better than bullion
  • 2 tsp tahini (optional)
  • 1 tbsp liquid aminos (optional)
  • 1 tsp thyme
  • 2 tsp nutritional yeast
  • 2 tsp italian herb seasoning
  • 1 tsp garlic powder (?)
  • 1 tsp onion powder (?)
  • 1 tsp dried mushroom powder / umami powder (optional)
  • Vegan mozzeralla

Directions

  • If using dried mushrooms, let mushrooms sit in 1 cup of warm water
  • Save 1 cup of water
  • Heat cast iron on medium
  • Add oil to cast iron
  • Add mushrooms
  • Let mushrooms brown for about 8 minutes
  • Add onions and cook until translucent
  • Add everything else except cheese
  • Heat to boil uncovered on medium
  • Simmer covered for 8 minutes on low
  • Prehead oven to 450
  • Add cheese
  • Add uncovered into oven for 5 minutes
  • Let sit for 5 minutes and serve
