Jamaican Lentils and Rice
Makes 8 jars
Large Pot
- 2 tbsp coconut oil
- 6 garlic cloves
- 1 1/2 cup brown rice
- 1 1/2 cup lentils
- 6 cups water
- 3 tsp salt
- 3 tsp pepper
Large Skillet
- 1 can pineapple w/ juice
- 2 tbsp maple syrup
- 2 tbsp hot pepper (jalapeneo, habenaro, or chipotle)
- 1 tbsp allspice
- 2 tbsp soy sauce
- 2 inch ginger
- 1/4 tsp cinnamon
- 1/2 tsp nutmeg
Optional
- 1 package of field roast sausage links
Topping
- Green onions or chives
- Vinegar
Optional
- Turmeric
- 1/4 of an onion
Directions
- Put coconut oil and garlic into a pot
- Heat on medium-high and brown
- Add remaining pot ingredients
- Heat on medium-high unitl simmer
- Cover, reduce to medium-low for 45 minutes
- Put all skillet ingredients onto skillet and heat on medium until cooked
- Mix all ingredients together, add scallions, add vinegar, serve
