Jamaican Lentils

Jamaican Lentils and Rice

Makes 8 jars


Large Pot

  • 2 tbsp coconut oil
  • 6 garlic cloves
  • 1 1/2 cup brown rice
  • 1 1/2 cup lentils
  • 6 cups water
  • 3 tsp salt
  • 3 tsp pepper

Large Skillet

  • 1 can pineapple w/ juice
  • 2 tbsp maple syrup
  • 2 tbsp hot pepper (jalapeneo, habenaro, or chipotle)
  • 1 tbsp allspice
  • 2 tbsp soy sauce
  • 2 inch ginger
  • 1/4 tsp cinnamon
  • 1/2 tsp nutmeg

Optional

  • 1 package of field roast sausage links

Topping

  • Green onions or chives
  • Vinegar

Optional

  • Turmeric
  • 1/4 of an onion

Directions

  • Put coconut oil and garlic into a pot
  • Heat on medium-high and brown
  • Add remaining pot ingredients
  • Heat on medium-high unitl simmer
  • Cover, reduce to medium-low for 45 minutes
  • Put all skillet ingredients onto skillet and heat on medium until cooked
  • Mix all ingredients together, add scallions, add vinegar, serve
