Red Lentil Curry
Toast spices for 3 minutes
- 1/2 tsp turmeric
- 1 tsp paprika
- 2 tsp garam masala
- 1/4 tsp cardamon
- 1/2 tsp coriander
- 1/2 tsp cumin
- 1/2 tsp salt
Then mix into spices
- 1 shallot
- 2 cloves garlic
- 1 can diced tomatoes
- 1 tbsp oil
Saute for 4 minutes
- 1 cup red lentils
- 1 can coconut milk
- 1 cup water
- Heat to boil
- Reduce heat to medium
- Cover and cook for 8-10 minutes
