Red Lentil Curry


Toast spices for 3 minutes

  • 1/2 tsp turmeric
  • 1 tsp paprika
  • 2 tsp garam masala
  • 1/4 tsp cardamon
  • 1/2 tsp coriander
  • 1/2 tsp cumin
  • 1/2 tsp salt

Then mix into spices

  • 1 shallot
  • 2 cloves garlic
  • 1 can diced tomatoes
  • 1 tbsp oil

Saute for 4 minutes

  • 1 cup red lentils
  • 1 can coconut milk
  • 1 cup water
  • Heat to boil
  • Reduce heat to medium
  • Cover and cook for 8-10 minutes
