Potato Salad
Ingredients
- 4 potatos (russet / medium)
- 1/2 can chickpeas
- 2 stalks green onions
- 1/2 cup mayo (112g)(veganaise)
- 1 tbsp tsp mustard (15g)
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp tsp vinegar
- 1 tsp dill
Directions
- Peel and cube potatoes
- Add potatoes to pot of water, with some salt and vinegar
- Heat to boil, reduce to medium, cover
- Boil potatoes for 11 minutes
- Mix remaining ingredients into bowl
- Strain potatoes and add to cold water for a few minutes
- Mix potatoes together with other ingriendents
- Chill and server (30 minutes)
