Potato Salad


Ingredients

  • 4 potatos (russet / medium)
  • 1/2 can chickpeas
  • 2 stalks green onions
  • 1/2 cup mayo (112g)(veganaise)
  • 1 tbsp tsp mustard (15g)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp tsp vinegar
  • 1 tsp dill

Directions

  • Peel and cube potatoes
  • Add potatoes to pot of water, with some salt and vinegar
  • Heat to boil, reduce to medium, cover
  • Boil potatoes for 11 minutes
  • Mix remaining ingredients into bowl
  • Strain potatoes and add to cold water for a few minutes
  • Mix potatoes together with other ingriendents
  • Chill and server (30 minutes)
