Nutritious Salad


Ingredients (for 2)

  • 3 cups mixed greens (120g)
  • 1 cup brocolli slaw
  • 6 olives ( or avocado )
  • 2 medjool dates
  • 1/4 cup saurkraut
  • 1/4 cup walnuts (30g) ( almond, pumpkin, sunflower )

Protien

  • 1/3 can chickpeas
  • 1/3 block tofu

Optional

  • Trader Joes Creamy Dill dressing
  • Trader Joes Green Godess
  • 1 pickle
  • 1 large carrot (72g)
  • 1 cup cherry tomatoes (150g)
  • 1 bell pepper (150g) (red, yellow or orange)
  • Italian Dressing
    • 2 tbsp olive oil
    • 1 tbsp lemon juice or vinegar
    • Salt & Pepper

Notes

If you don't have avocados, then olives, walnuts, almonds, sunflower seeds can be a substitute
