Ingredients
- 5 tablespoons coconut oil
- 24 ounces fresh cremini mushrooms, cleaned and sliced
- 1 medium onion (diced)
- 3 garlic cloves (minced)
- 1/2 cup white wine (dry)
- 3 tablespoons flour (all purpose)
- 3 cups vegetable broth
- 1 can coconut milk (full fat / 14oz)
- 1 teaspoon thyme (dried)
- Salt
- Pepper
Directions
- Add carrots and onion to pot
- Heat on medium and simmer until onions are translucent
- Add all remaining ingredients
- Turn heat to high and heat to boil
- Cover with lid and reduce heat to low
- Cook for 25 minutes
- Turn off heat and remove lid
- Let stand for 10-15 minutes
- Serve
