Cream of Mushroom Soup

Ingredients

  • 5 tablespoons coconut oil
  • 24 ounces fresh cremini mushrooms, cleaned and sliced
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 1/2 cup white wine (dry)
  • 3 tablespoons flour (all purpose)
  • 3 cups vegetable broth
  • 1 can coconut milk (full fat / 14oz)
  • 1 teaspoon thyme (dried)
  • Salt
  • Pepper

Directions

  • Add carrots and onion to pot
  • Heat on medium and simmer until onions are translucent
  • Add all remaining ingredients
  • Turn heat to high and heat to boil
  • Cover with lid and reduce heat to low
  • Cook for 25 minutes
  • Turn off heat and remove lid
  • Let stand for 10-15 minutes
  • Serve
