Lentil and Barley Soup

- 2 tbsp oil
- 2 onions
- 3 cup of water
- 1/3 cup lentils (green)
- 1/3 cup barely
- 2 cloves garlic
- 6 baby carrots
- 1/2 tsp mushroom powder
- 1/2 tsp papricka
- 1/2 tsp thyme
- 1/2 tsp dill
- 1 tbsp liquid aminos ( or soy sauce )
- 2 tsp better than bullion
- 4 drops liquid smoke

- 1 tbsp vegetable better than bullion
- 1/2 cup peas
- 1/2 cup corn
- 1 cup spinach ( chopped / or any green )
- Pickled jalapeneo
- Vegan sour cream

- Sliced avocado

- Shredded cheese
- Toasted bread
- Saute the saute ingredients in a large pot
- Then put all boil ingredients in the pot
- Turn heat to medium and heat to simmer
- Cover with lid with slight opening and reduce heat to low
- Cook for 30 minutes
- Add final spices
- Cook for another 5 minutes
- Turn off heat and remove lid
- Let stand for 15 minutes
- Serve
