Lentil and Barley Soup

Serves 1


Ingredients

    Saute

  • 2 tbsp oil
  • 2 onions
  • Boil

  • 3 cup of water
  • 1/3 cup lentils (green)
  • 1/3 cup barely
  • 2 cloves garlic
  • 6 baby carrots
  • Finish

  • 1/2 tsp mushroom powder
  • 1/2 tsp papricka
  • 1/2 tsp thyme
  • 1/2 tsp dill
  • 1 tbsp liquid aminos ( or soy sauce )
  • 2 tsp better than bullion
  • 4 drops liquid smoke

  • 1 tbsp vegetable better than bullion
  • 1/2 cup peas
  • 1/2 cup corn
  • 1 cup spinach ( chopped / or any green )
    • Garnish

      • Pickled jalapeneo
      • Vegan sour cream
      • Green onions or chives
      • Sliced avocado
      • Salsa
      • Shredded cheese
      • Toasted bread

      Directions

      • Saute the saute ingredients in a large pot
      • Then put all boil ingredients in the pot
      • Turn heat to medium and heat to simmer
      • Cover with lid with slight opening and reduce heat to low
      • Cook for 30 minutes
      • Add final spices
      • Cook for another 5 minutes
      • Turn off heat and remove lid
      • Let stand for 15 minutes
      • Serve
