Tofu and Rice

Ingredients
- 1 block tofu
- 140g brown rice
- 1 cup brocolli
- 1 1/2 tbsp corn starch (arrowroot powder)
- 1 tbsp olive oil
- 1 tbsp soy sauce (tamari / liquid aminos)
- 1/2 tsp onion powder
Optional
- Sauce for tofu
Directions
- Preheat oven to 400 degrees
- Add water into a large pot, fill halfway, heat to boil
- Cut tofu into WxLxH 5x4x3
- Toss tofu in wet ingredients
- Add starch and toss again
- Add tofu to bake sheet and bake for 30 minutes at 400 degrees
- Add rice to pot and boil for 30 minutes
- Add brocolli to steaming basket 6 minutes before rice is finished
- Optional: When tofu is done, toss in sauce and bake for additional 5 minutes
