Tofu and Rice

Ingredients

  • 1 block tofu
  • 140g brown rice
  • 1 cup brocolli
  • 1 1/2 tbsp corn starch (arrowroot powder)
  • 1 tbsp olive oil
  • 1 tbsp soy sauce (tamari / liquid aminos)
  • 1/2 tsp onion powder

Optional

  • Sauce for tofu

Directions

  • Preheat oven to 400 degrees
  • Add water into a large pot, fill halfway, heat to boil
  • Cut tofu into WxLxH 5x4x3
  • Toss tofu in wet ingredients
  • Add starch and toss again
  • Add tofu to bake sheet and bake for 30 minutes at 400 degrees
  • Add rice to pot and boil for 30 minutes
  • Add brocolli to steaming basket 6 minutes before rice is finished
  • Optional: When tofu is done, toss in sauce and bake for additional 5 minutes
